French Crepes My Way
- 250 g flour
- 4 eggs
- 12 liter milk
- 1 teaspoon vanilla essence
- 1 pinch salt
- 50 g butter
- Put the flour, eggs and vanilla essence into a mixing bowl.
- Add a pinch of salt.
- Add the milk a little at a time and whisk until smooth like double cream Be careful to add the milk slowly otherwise it will form lumps.
- Melt the butter in the microwave and add to the mixture.
- To cook, melt a knob of butter in a non stick pan.
- Add 3/4 ladle of mixture to the pan and swirl it round.
- Cook until the pancake moves around by itself in the pan.
- Turnover and cook the other side.

- Serve with the filling of your choice.
