Baked Cheese Omelette Recipe
- 2 Tbsp. Butter
- 1 c. Finely diced cooked ham, (about 1/4 lb.)
- 6 x Large eggs
- 1/2 tsp Salt Few dashes liquid red pepper seasoning
- 1/2 tsp Rubbed sage
- 1/4 tsp Thyme
- 1/4 tsp Tarragon, crushed
- 1/4 c. Flour
- 1/2 tsp Baking pwdr
- 1 c. Small curd cottage cheese
- 2 c. Grated Monterey Jack cheese
- Coat 4 (1-c.) bakers with butter, using 1 tsp.
- per dish.
- Saute/fry ham in remaining butter about 5 min.
- Place in baking dishes.
- Beat Large eggs with salt, pepper seasoning, sage, thyme, tarragon, flour and baking pwdr.
- Stir in cheeses.
- Spoon into baking dishes.
- Bake in 400 degree oven 15 min.
- Reduce heat to 325 degrees and bake 15 min longer or possibly till puffed and golden brown.
- Makes 4 servings.
