Blue Cheese Bacon Potatoes

  1. Rub potatoes with shortening.
  2. Bake at 400 for 1 hour.
  3. Cut a lengthwise slice from the top of each potato.
  4. Scoop out the inside from each and mash.
  5. Add sour ceam, blue cheese, milk, butter salt and pepper to mashed potatoes.
  6. Beat with electric mixer until fluffy.
  7. Spoon mixture into potato shells.
  8. Return to oven for 15 minutes, or until heated through.
  9. Sprinkle with bacon.
