Adobo Sauce If I Understand My Chiles Recipe
- 3 lrg Dry ancho chiles, stems and seeds removed really Pasilla chiles
- 1 x Dry Pasilla, stem and seeds removed really negro chiles
- 1 lrg Onion
- 2 x Cloves garlic, minced
- 1/2 tsp Dry oregano
- 1/4 tsp Grnd cumin
- 1/4 c. Veggie oil
- 1/4 c. Distilled white vingegar
- 11/2 tsp Sugar
- Cover chiles with warm water, let sit for 15 minutes.
- Combine chiles, and 1/4 to 1/2 c. of the water they were soaking in, onion, garlic, oregano and cumin in a blender and puree.
- Saute/fry the mix in oil for 5 minutes add in vinegar and sugar and bring to a boil.
- Reduce heat, simmer till thick about 5-8 minutes.
