Adobo Sauce If I Understand My Chiles Recipe

  1. Cover chiles with warm water, let sit for 15 minutes.
  2. Combine chiles, and 1/4 to 1/2 c. of the water they were soaking in, onion, garlic, oregano and cumin in a blender and puree.
  3. Saute/fry the mix in oil for 5 minutes add in vinegar and sugar and bring to a boil.
  4. Reduce heat, simmer till thick about 5-8 minutes.
