Vegetable Chicken Delight

  1. Cut all vegetables first and place in large mixing bowl.
  2. Add vinegar, olive oil, basil and oregano (salt to taste is purely optional).
  3. Toss so that all vegetables are coated.
  4. Set aside to briefly marinate.
  5. Prepare your chicken.
  6. Heat a large skillet or electric frypan with 2 tablespoons additional olive oil.
  7. When hot, brown garlic in oil.
  8. When done, add chicken and toss until it just turns white.
  9. Add vegetables with all the liquid.
  10. Toss to mix and turn down heat.
  11. Cover and let simmer, stirring occasionally, for approximately 15 to 20 minutes, or until veggies are just tender and not soggy.
  12. Spoon over rice or pasta.
