Vegetable Chicken Delight
- 4 large boneless chicken breasts, cut into chunks
- 3 medium zucchini, cut into chunks
- 3 medium meaty tomatoes, cut into chunks
- 4 Tbsp. dried basil
- 1 Tbsp. dried oregano
- 1/4 c. white vinegar
- 1/4 c. olive oil
- 3 cloves garlic, crushed
- cooked rice or your favorite pasta
- Cut all vegetables first and place in large mixing bowl.
- Add vinegar, olive oil, basil and oregano (salt to taste is purely optional).
- Toss so that all vegetables are coated.
- Set aside to briefly marinate.
- Prepare your chicken.
- Heat a large skillet or electric frypan with 2 tablespoons additional olive oil.
- When hot, brown garlic in oil.
- When done, add chicken and toss until it just turns white.
- Add vegetables with all the liquid.
- Toss to mix and turn down heat.
- Cover and let simmer, stirring occasionally, for approximately 15 to 20 minutes, or until veggies are just tender and not soggy.
- Spoon over rice or pasta.
