Spaghetti with Clam Sauce
- 6 Tablespoons Butter
- 2 cloves Garlic, Minced
- 1/2 whole Medium Sized Onion, Chopped
- 3 Tablespoons Flour
- 2 cans 6-1/2 Oz. Choppped Clams, Liquid Reserved
- 1 quart Half-and-half
- 1/4 teaspoons White Pepper
- 1/2 teaspoons Ground Thyme
- 1 teaspoon Salt
- 1 pound Spaghetti Or Linguini Cooked & Drained
- Melt butter in skillet.
- Add garlic and onions and saute over med.
- low heat until tender, but not brown.
- Stir in flour until smooth and golden.
- Combine drained clam liquid, half and half, pepper, thyme and salt in a saucepan.
- Heat to just below boiling point.
- Add clams and the onion mixture and cook until smooth and thickened.
- Serve over prepared pasta and sprinkle with Parmesan if desired.
- I also like to adorn this with some fresh chopped parsley to serve.
