Salmon Flakes for Bento

  1. Put the salmon in a heat-resistant container.
  2. Pour on the sake and cover with plastic wrap.
  3. Microwave for 3-4 minutes.
  4. Remove the skin and bones from the salmon from Step 1 and break apart the flesh.
  5. Put Step 2, including the juices, into a frying pan.
  6. Add the mirin and sugar and cook until the liquid evaporates.
  7. Optionally sprinkle with white sesame seeds.
