Microwave and Mash! Easy Sweet Potato Pound Cake
- 300 grams Sweet potato
- 150 ml Milk
- 2 Eggs
- 40 grams Butter (or margarine)
- 50 grams Sugar
- 20 grams White flour
- 5 grams Baking powder (optional)
- Cut the sweet potato into 1 cm chunks, microwave until soft, then mash.
- Add the milk and mix.
- Preheat the oven to 180C.
- In a separate bowl, whip the butter until creamy like the consistency of mayonnaise.
- (microwave for about 40 seconds at 300 W.)
- Add the sugar to the butter and mix well.
- Next, add the beaten egg a little at a time and mix well.
- Add the sweet potato and mix.
- Sift the flour and baking powder, and fold into the batter.
- Line your baking pan with parchment paper and pour the batter into it.
- Bake at 180C for 40 minutes.
