Upside-Down Pizza Casserole
- 1 pound ground beef
- 1 cup onions chopped
- 1 cup green bell peppers chopped
- 1 can pizza sauce
- 1/4 pound pepperoni chopped
- 1/2 teaspoon italian seasoning dried
- 1 jar mushrooms sliced
- 6 ounces mozzarella cheese sliced
- 1 cup milk
- 1 tablespoon vegetable oil
- 2 large eggs
- 1 cup flour, all-purpose
- 1/4 teaspoon salt
- 1/4 cup parmesan, parmigiano-reggiano cheese, grated grated
- Heat oven to 400F (200C).
- In a large skillet over medium-high heat, brown the ground beef mince, onions and bell pepper.
- Drain off any excess fat from the minced beef.
- Stir in pizza sauce, pepperoni, Italian seasoning and mushrooms.
- Bring to a boil.
- Reduce heat to low and simmer uncovered for up to 10 minutes, stirring occasionally.
- Meanwhile, in small bowl combine milk, oil and eggs; beat for 1 minute at medium speed.
- Lightly spoon flour into measuring cup, level off.
- Add flour and salt; beat for 2 minutes at medium speed or until smooth.
- Spoon the meat mixture evenly into un-greased 13x9 inch baking dish.
- Lay or arrange cheese slices over hot meat mixture.
- Pour topping evenly over cheese, covering completely and sprinkle with Parmesan cheese.
- Bake at 400F (200C) for 20 to 30 minutes or until puffed and deep golden brown.
