Rolled Chicken Dijon

  1. Preheat oven to 375F.
  2. Mix mustard, onions, margarine and tarragon until well blended.
  3. Place chicken, top-sides down, on large cutting board.
  4. Spread each breast with 1 Tbsp.
  5. of the mustard mixture.
  6. Starting at one of the short ends, tightly roll up chicken.
  7. Place, seam-sides down, in single layer in shallow lightly greased baking dish; brush evenly with the remaining mustard mixture.
  8. Bake 25 to 30 min.
  9. or until chicken is cooked through (170F).
