Dirty Rice (Dressing)
- 1/2 lb. sausage
- 1/2 lb. hamburger
- 2 medium onions, chopped
- 1 small bell pepper, chopped
- 1 rib celery
- 2 cloves garlic
- 1 can chicken broth
- salt and pepper to taste
- 1/4 tsp. red pepper sauce
- 2 to 2 1/2 c. cooked rice
- 1/2 lb. chicken livers or gizzards
- 3 green onions, chopped
- Saute meat until brown; add onion, celery, green pepper and garlic.
- Cook, stirring and scraping bottom of pan.
- Saute livers and green onions in butter until done.
- Finely chop livers; stir livers mixture and chicken broth, salt, pepper and red pepper sauce into meat mixture.
- Reduce heat and simmer 40 minutes, covered.
- Simmer, uncovered, 20 minutes.
- Stir in as much as needed to make a moist dressing.
