Moroccan Bean Soup
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, crushed
- 2 teaspoons cumin
- 1 teaspoon cinnamon
- 1/2 teaspoon cardamon
- 5 cups boiling water
- 440g can crushed tomatoes King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup tomato paste
- 2 teaspoons VEGEMITE
- 1 large carrot, cut into 1cm cubes
- 420g can chickpeas, drained
- 200g green beans, cut into 2cm lengths
- 2 tablespoons chopped coriander
- salt and freshly ground black pepper, to taste
- Cook onion and garlic in a large bowl on HIGH (850W) for 2-3 minutes, add cumin, cinnamon and cardamom then cook a further 1-2 minutes or until fragrant.
- Add water, tomatoes, tomato paste, Vegemite* and carrot, cover then cook on HIGH (850W) for 10-12 minutes, stirring occasionally.
- Stir in chickpeas and green beans and cook on HIGH (850W) for a further 2-3 minutes or until vegetables are tender.
- Remove from microwave, stir through coriander and season with salt and pepper.
