Moroccan Bean Soup

  1. Cook onion and garlic in a large bowl on HIGH (850W) for 2-3 minutes, add cumin, cinnamon and cardamom then cook a further 1-2 minutes or until fragrant.
  2. Add water, tomatoes, tomato paste, Vegemite* and carrot, cover then cook on HIGH (850W) for 10-12 minutes, stirring occasionally.
  3. Stir in chickpeas and green beans and cook on HIGH (850W) for a further 2-3 minutes or until vegetables are tender.
  4. Remove from microwave, stir through coriander and season with salt and pepper.
