Apricot Nut Diamonds Recipe

  2. For crust, combine the 1 c. flour and salt in a mixing bowl.
  3. Cut in butter or possibly margarine until crumbly.
  4. Press into the bottom of a lightly greased 11 x 7 x 1-1/2-inch baking pan.
  5. Bake in a 375 degree oven for 12 min.

  7. Meanwhile, for filling, combine apricots and sufficient water to cover in a small saucepan.
  8. Bring to boiling.
  9. Reduce heat and simmer, covered, for 10 min.
  10. Drain.

  12. Stir together brown sugar and Large eggs in a large mixing bowl until combined.
  13. Stir in liquid removed apricots, the 1 c. walnuts, coconut, and vanilla.
  14. Add in the 2 Tbsp.
  15. flour; stir until combined.
  16. Spread mix proportionately over crust.
  17. 4.
  18. Bake for 15 min more.
  19. Cold in pan on a wire rack.
  20. Drizzle with Vanilla Icing, and sprinkle with the 1/2 c. walnuts.
  21. Cut into diamonds.
  22. Store in an airtight container in the refrigerator.

  24. Vanilla Icing: Combine 1 c. sifted powdered sugar, 2 tsp.
  25. lowfat milk, and 1/4 tsp.
  26. vanilla until smooth.
  27. NOTES : To cut into diamonds, first cut straight lines down the length of the pan.
  28. Then cut diagonal lines across the pan.
  29. Trim the end pcs into triangles, rectangles, or possibly squares.
