Tom'S Famous Seafood Recipe
- 3/4 lb. fresh or frozen sea scallops
- 3/4 lb. fresh or frozen shrimp
- 2 c. fresh pea pods (16 oz. frozen)
- 1 sliced green pepper
- 1 sliced large onion
- 3 cloves minced garlic
- 3 Tbsp. olive oil
- 3 Tbsp. butter
- 1 tsp. dried crushed basil
- 1/4 tsp. crushed red pepper
- 2 tsp. dried parsley
- 1 medium tomato, seeded and chopped
- 10 oz. linguine, cooked and drained
- 3 Tbsp. freshly grated Parmesan
- Thaw scallops and shrimp (if frozen).
- Cut in half.
- Peel and devein shrimp.
- In a medium bowl, combine scallops and shrimp; set aside.
- Thaw pea pods; cut in half.
- Set aside.
- In a skillet, cook onions and garlic in hot oil and butter over medium-high heat for 30 seconds.
- Add 1/2 the scallop and shrimp mixture.
- Add parsley, basil and red pepper.
- Cook and stir for 3 to 4 minutes until the scallops are opaque and shrimp pink.
- Remove cooked scallops and shrimp with slotted spoon and add other half of scallops and shrimp and repeat cooking.
- Return all scallops and shrimp to skillet.
- Add pea pods and tomatoes.
- Cook and stir for 2 minutes more.
- In a large bowl, toss scallop mixture with linguine.
- Transfer to large platter; sprinkle with cheese. Serves 3 to 4 people.
