All-in-One Shrimp Skewers with Grilled Rice

  1. Heat grill to medium-high heat.
  2. Toss shrimp with 1/4 cup dressing.
  3. Let stand 10 min.
  4. Drain; discard dressing.
  5. Thread shrimp evenly onto 4 skewers.
  6. Stack 3 (14-inch) squares of foil.
  7. Fold foil in half, then double-fold 2 opposite sides to make pouch.
  8. Spoon rice, zucchini and peppers into pouch.
  9. Gradually add broth and remaining dressing.
  10. Double-fold foil at top of pouch to seal.
  11. Grill packet 10 to 15 min.
  12. or until liquid is absorbed.
  13. Remove from grill.
  14. Let stand 5 min.
  15. Meanwhile, grill shrimp skewers 5 min.
  16. or until shrimp turn pink.
  17. Spoon rice mixture onto platter; top with shrimp and onions.
