Red Currants With Eggedosis
- 3 cups fresh red currants, washed and stemmed
- sugar
- 6 eggs, separated
- 1 pinch salt
- 12 cup sugar
- 1 12 teaspoons vanilla
- Sprinkle a little sugar on currants and stir gently to mix.
- Let stand at room temperature 30 minutes, or until syrup begins to form
- Meanwhile, beat egg whites and salt until foamy.
- Gradually beat in sugar, beating until egg whites form stiff peaks.
- Beat egg yolks until thick.
- Mix vanilla into egg yolks.
- Gently fold egg whites into yolks.
- Spoon currants into stemmed glasses, reserving a few for garnish.
- Spoon egg mixture over currants.
- Top with reserved currants.
