Corny Chili
- 2 cans (15 oz. each) black beans
- 1 large onion
- 1 clove garlic
- 1 lb. ground turkey
- 3 Tbsp. chili powder
- 1 large can (28 oz.) tomatoes
- 1 small can (4 oz.) diced green chilies
- 1 (10 oz.) pkg. frozen corn kernels
- Place
- beans
- in
- colander
- and
- rinse with water until water runs
- clear.
- Chop onion into small pieces and place in pan. Squeeze
- garlic
- into
- pan.
- Place
- pan
- on
- burner
- and crumble in turkey.
- Cook on medium-high heat; stir occasionally
- for about 5 minutes, until turkey is no longer pink.
- Add chili powder,
- tomatoes (break them up with wooden spoon) and their liquids, chilies, corn and beans to pan.
- Reduce heat to medium-low
- and
- simmer,
- uncovered,
- for 15 minutes.
- Makes 4 servings.
