Cheesy Potato & Egg Skillet

  1. Heat oil in large nonstick skillet on medium heat.
  2. Add potatoes and onions; cover.
  3. Cook 16 to 18 min.
  4. or until vegetables are tender and golden brown, stirring occasionally.
  5. Stir in tomatoes.
  6. Pour eggs over vegetable mixture.
  7. (Do not stir.)
  8. Cover; cook 12 to 14 min.
  9. or until eggs are set.
  10. Top with cheese and basil; cook, covered, 2 to 3 min.
  11. or until cheese is melted.
