Melon & Ham Bites (Southern)
- 1/2 whole Small Watermelon (Cut Into Approximately 1" Cubes)
- 16 ounces, weight Country Ham
- 1/4 cups Balsamic Vinegar
- 1 Tablespoon Sugar
- 2 Tablespoons Thinly Sliced Watermelon
- Slice the watermelon into approximately 1 cubes.
- Fry the country ham in a skillet over medium high heat until completely cooked and browned around the edges.
- Cut the ham to fit the watermelon pieces and skewer onto cocktail picks or toothpicks if you misplaced your pretty ones like I did.
- In a sauce pan over medium heat, combine the balsamic vinegar with the sugar and cook until well blended.
- Then add the watermelon in thinly sliced pieces and cook until the pieces are nearly dissolved; if some pieces left are left undissolved, that is okay.
- Be careful not to scorch your vinaigrette.
- Thats it.
