French Toast with Plums and Philly
- 6 plums or peaches, quartered, stones removed
- 1/4 cup brown sugar
- 1 teaspoon vanilla essence
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla essence, extra
- 8 slices sourdough bread
- 1 tablespoon butter
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- 1/2 cup cream
- Place plums, sugar and vanilla in a large non-stick pan and cook over a low heat until peaches are tender and have caramelised.
- Meanwhile, whisk together the milk, egg and extra vanilla.
- Dip bread slices into the milk mixture.
- Heat butter in a non-stick frying pan.
- Add bread slices and cook for 2-3 minutes each side over a medium heat until golden.
- Combine the Philly* and cream until smooth.
- Serve the toast with plums and a dollop of the Philly* cream.
