French Toast with Plums and Philly

  1. Place plums, sugar and vanilla in a large non-stick pan and cook over a low heat until peaches are tender and have caramelised.
  2. Meanwhile, whisk together the milk, egg and extra vanilla.
  3. Dip bread slices into the milk mixture.
  4. Heat butter in a non-stick frying pan.
  5. Add bread slices and cook for 2-3 minutes each side over a medium heat until golden.
  6. Combine the Philly* and cream until smooth.
  7. Serve the toast with plums and a dollop of the Philly* cream.
