Chicken Florentine

  1. Heat 1 Tbsp.
  2. of the dressing in large ovenproof skillet on medium heat.
  3. Add spinach; cook and stir 1 min.
  4. or just until spinach is wilted.
  5. Remove from skillet; cover to keep warm.
  6. Add remaining 2 Tbsp.
  7. dressing and the chicken to skillet; turn chicken over to evenly coat both sides with dressing.
  8. Cook 5 to 6 min.
  9. on each side or until chicken is cooked through (170F).
  10. Top evenly with ham and cheese; cover.
  11. Reduce heat to low; cook 1 to 2 min.
  12. or until cheese is melted.
  13. Or, place under a broiler to brown.
  14. Spoon spinach mixture evenly onto four plates; top each with a chicken breast.
