Grit Cheese Bake

  1. Fry bacon until crisp and drain.
  2. Crumble into small bites and set aside.
  3. Heat oven to 350u0b0.
  4. Grease a 9 x 13-inch baking dish with shortening or butter.
  5. Bring water to a boil.
  6. Slowly add grits and salt, stirring as you add.
  7. Simmer 4 to 6 minutes, stirring occasionally.
  8. Remove grits from heat; add 2/3 of bacon. Keep remaining 1/3 to garnish.
  9. Add eggs, 1 1/2 cups of cheese and onion flakes; mix well.
  10. Pour into prepared dish.
  11. Bake 40 to 45 minutes or until a knife can be inserted and comes out clean.
  12. Top with remaining cheese and bacon; drop butter over mixture, allowing butter to melt into mixture.
  13. Let stand 5 minutes before serving.
  14. Excellent for brunch.
  15. Sausage may be substituted. Makes 12 generous servings.
