Chocolate Pie
- 1 c. sugar
- 3 heaping Tbsp. cocoa
- 3 heaping Tbsp. plain flour
- 1 1/2 c. milk
- 3 egg yolks
- 1 tsp. vanilla
- 1/2 stick margarine
- 1 (9-inch) pie crust, baked
- 3 egg whites
- 1/4 c. sugar
- 1 tsp. vanilla
- In a heavy saucepan, combine sugar, cocoa and flour.
- Add just enough of the milk to make a paste.
- Add egg yolks, heat until thoroughly blended.
- Stir in remaining milk and 1 teaspoon vanilla.
- Cook over medium heat, stirring constantly until mixture thickens.
- Remove from heat.
- Add margarine, stirring until melted.
- Pour into pie shell.
- In a small bowl, beat egg whites with electric mixer at high speed until soft peaks form. Gradually add sugar and vanilla, beating until stiff peaks form. Spread over pie filling.
- Bake at 350u0b0 about 5 minutes, until meringue is lightly browned.
