Green Halibut Ceviche Recipe

  1. Dice the fish into 1/2-inch cubes and add to a medium bowl.
  2. Add the salt and toss to coat.
  3. Add the lime juice and toss to combine.
  4. Marinate until the edges of the cubes begin to turn opaque, tossing occasionally, about 30 minutes.
  5. Dice the avocados and add to the cured fish, along with the green olives, tomatillos, onion, cilantro, and jalapeno.
  6. Add the olive oil and toss to combine.
  7. Taste, adding more salt as needed.
  8. Serve over tostadas or with tortilla chips for scooping.
