Chocolate Zucchini Bread
- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 tsp. vanilla
- 2 c. grated zucchini (not peeled)
- 2 oz. unsweetened chocolate, melted
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 3/4 c. semi-sweet chocolate chips
- 3/4 c. chopped walnuts
- In a large mixing bowl, combine eggs, sugar, oil and vanilla. Beat with electric mixer on low speed about 1 1/2 minutes until well blended. Add zucchini and melted, cooled chocolate; stir to blend.
- Sift together flour, baking soda, salt and cinnamon.
- Add dry ingredients, chocolate chips and nuts to egg mixture. Stir just enough to blend in dry ingredients.
- Pour batter into a greased and parchment lined or greased and floured 9 x 5-inch loaf pan.
- Bake at 350u0b0 for 60 to 70 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan on wire rack for 10 minutes.
- Turn out of pan and cool on rack.
