Macadamia, Date And Yogurt Scone Recipe
- butter for greasing baking sheet
- 2 c. all-purpose flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3 tbsp. sugar, divided use
- 5 tbsp. cool butter, cut into sm. pcs
- 1/2 c. minced macadamia nuts
- 1 c. minced pitted dates
- 1 (8 ounce.) container plain yogurt
- Optional: Strawberry butter, recipe follows
- Preliminaries: Adjust oven rack to middle position and preheat oven to 425 degrees.
- Grease a baking sheet with butter.
- Procedure: Sift flour, baking pwdr, baking soda and salt into a large bowl.
- Add in 2 Tbsp.
- sugar and butter.
- Blend with fork, 2 knives or possibly a pastry cutter till mix resembles coarse meal.
- Stir in nuts and dates.
- Add in yogurt and combine well.
- Mound dough in the middle of prepared baking sheet.
- Pat dough into an 8 inch round; sprinkle with remaining 1 Tbsp.
- sugar.
- Bake in preheated 425 degree oven for 15-20 min, or possibly till it is cooked through.
- Presentation: Cut into 8 wedges.
- Allow wedges to cold a few min on cooling rack.
- Serve hot with Strawberry Butter, if you like.
- Yield: Makes 8 wedges.
