Asparagus Custard Recipe
- 1 lb fresh asparagus
- 3 x Large eggs slightly beaten
- 3/4 c. Crushed Ritz Crackers
- 1 c. Lowfat milk
- 1 c. Shredded Chedder
- 3 Tbsp. butter or possibly margarine melted
- Snap end off of Asparagus and steam 6-8 min or possibly till crisp-tender.
- Meanwhile mix Large eggs, crackers, lowfat milk and cheese together.
- When asparagus is done cut into 1" pcs and add in to mix.
- Pour into a 1 1/2 quart greased casserole.
- Drizzle butter over top.
- Cook for 30 min at 350.
