Marble Loaf Cake
- 1 1/2 sq. unsweetened chocolate
- 2 1/2 c. sifted cake flour
- 3/4 tsp. salt
- 3 tsp. baking powder
- 1/2 c. soft butter
- 1/2 c. sugar
- 3 eggs
- 3/4 tsp. vanilla extract
- 3/4 c. milk
- Melt chocolate over hot, not boiling, water.
- Let cool. Preheat oven to 350u0b0.
- Grease and flour a 9 x 5 x 3-inch loaf pan. Sift flour with salt and baking powder; set aside.
- In a large bowl of electric mixer at medium speed, beat butter and sugar until light.
- Add eggs and vanilla, beating until light and fluffy.
- At low speed, beat in flour mixture, alternating with milk, beginning and ending with flour mixture.
- In medium bowl, combine 1/3 batter with chocolate, mixing well.
- Spoon plain and chocolate batters, alternately, into prepared pan.
- Cut batter, forming Z.
- Bake 65 minutes or until cake tester inserted in center comes out clean.
- Cool in pan 15 minutes.
- Remove from pan; cool thoroughly on wire rack.
- To serve, cut in thin slices.
