Grilled Pork with Mango Salsa

  1. Heat greased barbecue to medium heat.
  2. Cut off 2 fleshy sides of mango; discard pit.
  3. Place fruit on barbecue grate.
  4. Add meat; brush with oil.
  5. Grill 2 to 3 min.
  6. or until mangos are grill marked and slightly softened; remove mangos from barbecue.
  7. Grill meat an additional 20 to 25 min.
  8. or until done (160 degrees F), brushing with 1/4 cup barbecue sauce for the last 5 min.
  9. Transfer meat to cutting board; tent with foil.
  10. Let stand 10 min.
  11. Meanwhile, finely chop mangos; place in medium bowl.
  12. Stir in remaining barbecue sauce, onions and 1 Tbsp.
  13. each lime zest and juice.
  14. Combine remaining lime zest, juice and rice.
  15. Slice meat.
  16. Serve with rice and mango salsa.
