Awesome Pesto Asparagus

  1. Wash and cut asparagus to an appropriate size.
  2. Heat in a pot of water until they are an emerald green color.
  3. Do not wait until they turn olive green!
  4. We want to keep the vitamins in the vegetable!
  5. Layer asparagus in a casserole dish.
  6. Preheat oven to 350 degrees.
  7. In a small bowl mix the chopped tomatoes, garlic, pesto and olive oil together.
  8. Pour over asparagus and sprinkle the cheese on top.
  9. Bake uncovered in oven for about 10 to 15 minutes, or until the cheese is melted.
  10. Serve warm.
