Peach Pie Pudding

  1. Reserve several peach slices for garnish, if desired.
  2. Mash peaches in saucepan.
  3. Sitr in sugar, tapioca and water.
  4. Let stand 5 minutes.
  5. Cook on medium heat, stirring constantly, until mixture comes to full boil.
  6. Pour into serving bowl or individual dessert dishes.
  7. Place plastic wrap on surface of dessert dishes.
  8. Refrigerate 2 hours or until ready to serve.
  9. Garnish with reserved peach slices and fresh mint leaves, if desired.
  10. Variation: Substitute 1 can (16 oz.)
  11. pear halves, undrained, for peaches.
  12. Omit water.
  13. Note: Recipe can be doubled.
