Crispy Baked Chicken Recipe
- 1 3 to 3 1/4 lbs. frying chicken, cut up or possibly chicken breast
- 1 egg">egg or possibly white of egg">egg
- 2 tbsp. lowfat milk
- 1 c. instant potato flakes
- 1 teaspoon garlic pwdr
- 1/2 c. grated Parmesan cheese
- 1/2 c. butter
- Wash chicken pcs and pat dry.
- Set aside.
- Beat egg and lowfat milk in a bowl.
- In another bowl mix potato flakes, garlic pwdr and Parmesan cheese.
- Roll chicken first in egg mix, then in the potato flakes mix.
- Heat butter in shallow baking pan.
- Roll coated chicken pcs in the butter and place them skin side up in the pan.
- Bake at 400 degrees for 45 to 50 min or possibly till juices from thighs run clear when pierced with a fork.
- Transfer to serving platter.
- Serves 4.
- Diet tips: To reduce calories, fat, and cholesterol, remove the skin from the chicken before coating.
- Use diet or possibly light butter and the whites of Large eggs only.
