Blackberry Orange Ricotta Muffins

  1. Heat oven to 400F.
  2. Place paper baking cups into 12 muffin pan cups or grease cups.
  3. Set aside.
  4. Place blackberries and 2 tablespoons flour into bowl; toss lightly to coat.
  5. Set aside.
  6. Combine ricotta cheese, butter, half & half, egg and vanilla in another bowl; mix well.
  7. Combine remaining flour, sugar, baking powder, baking soda and salt in another bowl; mix well.
  8. Add flour mixture to butter mixture; stir just until moistened.
  9. Carefully stir blackberries and orange zest into batter.
  10. Spoon batter evenly into prepared muffin pan cups.
  11. Sprinkle tops with coarse grain sugar.
  12. Bake 15-20 minutes or until toothpick inserted in center comes out clean.
  13. Cool 5 minutes in pan; remove to cooling rack.
