Almond Meringue Torte

  1. In mixer bowl,tream the 1/2 cup sugar and shortening. Add egg yolks,tne
  2. at
  3. a time, beating well after each addition. Stir
  4. in
  5. milk
  6. and
  7. vanilla
  8. extract.
  9. Combine
  10. flour, baking powder andt/4
  11. teaspoon
  12. salt; add to creamed mixture and beat until
  13. smooth.
  14. Pour into 2 greased 9-inch cake pans. Beat egg whites
  15. with
  16. pinch of salt and cream of tartar until soft peaks form.
  17. Beat
  18. in
  19. 3/4
  20. cup
  21. sugar, 1 tablespoon at a time, until stiff, glossy peaks form.
  22. Divide meringue between pans, spreading over
  23. batter.
  24. Sprinkle
  25. with
  26. almonds
  27. and 1 tablespoon sugar mixed with the cinnamon.
  28. Bake at 350u0b0 for 30 minutes.
  29. Turn out onto rack to cool.tsing second rack, turn again so meringue is right side up.
  30. Save any almonds that may fall off for
  31. garnish. Notore
  32. than 6 hours before serving, place 1 layer,
  33. meringue side
  34. up,
  35. on serving plate.
  36. Spread with
  37. 3/4 of sweetened whipped cream flavored with vanilla and fruit.
  38. Top
  39. with remaining layer, meringue side up;tarnish with remaining cream and more fruit.
  40. Serves 10 to 16.
