Sausage-Bean Tamale Bake

  1. CASSEROLE:.
  2. Remove sausages from casings and crumble into a large skillet.
  3. Cook until browned, drain, set aside and reserve 1 tbsp of the pan drippings.
  4. Add onion and garlic to skillet.
  5. Saute until tender.
  6. Stir in sausage, beans, tomato juice and chili powder.
  7. Turn into a greased shallow
  8. 1 1/2-quart baking dish.
  9. Spoon tamale topping around edge of dish and bake at 400 for 20 minutes or until topping is golden brown.
  10. A cool cucumber salad goes especially well with this dish.
  11. TAMALE TOPPING:.
  12. Mix baking mix, cornmeal and chili powder.
  13. Add egg and milk.
  14. Stir only until dry ingredients are moistened.
