Basil Red Pepper Sandwiches

  1. Cut the top half off the loaf of bread; carefully hollow out the top and the bottom.
  2. In a small bowl, combine lemon peel and 2 TBSP oil.
  3. Spread over the cut side of bread top.
  4. Drizzle remaining oil inside bread bottom; layer with cheese, red pepper, basil and olives.
  5. Replace bread top.
  6. Wrap in foil.
  7. Bake at 350'F for 10-12 minutes or until cheese is melted.
  8. Slice before serving.
