Tortilla Soup Recipe
- 1 med. onion, minced
- 1 jalapeno pepper, minced
- 2 cloves garlic, minced
- 2 tbsp. vegetable oil
- 2 pound stew meat
- 2 (14 1/2 ounce.) cans tomatoes
- 1 (10 1/2 ounce.) can beef broth
- 1 (10 1/2 ounce.) can chicken broth
- 1 (10 1/2 ounce.) can tomato soup
- 3/4 c. water
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon lemon pepper
- 2 teaspoon Worcestershire
- 4 corn tortillas, sliced
- Shredded Cheddar cheese
- Add vegetable oil to a large pot and heat over medium heat.
- Add in the onion, jalapeno, garlic stew meat.
- Stir until tender and the meat is just cooked through.
- Add in the remaining ingredients and simmer for 1 hour.
- Add in tortillas last 10 min.
- Garnish with Cheddar cheese.
