Rice And Chicken Pie
- 1 lb. boneless chicken, cubed
- 1 tsp. butter
- 1 pkg. taco mix
- 1 bag Success rice
- 1 (12 oz.) jar Pace picante sauce
- 1 egg, beaten
- 2 c. shredded Cheddar cheese
- shredded lettuce
- chopped tomatoes
- sour cream
- sliced olives
- Cook rice for 7 minutes and set aside.
- In skillet over medium heat, cook chicken in margarine.
- Stir in seasoning mix and water. Cook, stirring often, until it thickens, about 3 to 4 minutes. Combine rice, 1/2 cup salsa, egg and 1 cup cheese.
- Press on bottom and sides of a 9-inch pie plate; sprinkle in 1/2 cup cheese.
- Top with chicken mixture.
- Bake at 350u0b0 for 20 minutes. Top with remaining cheese; let stand for 10 minutes.
- Garnish as desired.
- Serve with remaining salsa.
