Cheese Caraway Crackers

  1. Grate cheese and cut the very cold butter into small cubes.
  2. Place cheese, butter, flour, and salt in a food processor and pulse a few times until everything is crumbly.
  3. Taste the pastry and add more salt if you wish; it should be on the saltier side.
  4. Form a ball, wrap it plastic foil and refrigerate for 1 hour.
  5. Preheat oven to 180 degrees C (350 degrees F).
  6. Line two baking trays with baking paper.
  7. Roll the pastry on a floured surface (it is easier to do this in 2 batches) and cut the pastry into batons using a very sharp knife.
  8. Place the crackers onto the baking tray and brush them with egg wash. Sprinkle with caraway seeds.
  9. Sesame seeds or salt can be used instead, but caraway tastes best in this case.
  10. Bake until golden brown, about 20 minutes, but keep an eye on them.
