Cheese Caraway Crackers
- 2 cups Grated Gouda Or Cheddar
- 7 ounces, weight Very Cold Butter
- 2- 1/2 cups All-purpose Flour
- 1/2 teaspoons Salt
- 1 Egg, Whisked For Egg-wash
- Caraway Seeds Or Sesame Seeds, For Sprinkling
- Grate cheese and cut the very cold butter into small cubes.
- Place cheese, butter, flour, and salt in a food processor and pulse a few times until everything is crumbly.
- Taste the pastry and add more salt if you wish; it should be on the saltier side.
- Form a ball, wrap it plastic foil and refrigerate for 1 hour.
- Preheat oven to 180 degrees C (350 degrees F).
- Line two baking trays with baking paper.
- Roll the pastry on a floured surface (it is easier to do this in 2 batches) and cut the pastry into batons using a very sharp knife.
- Place the crackers onto the baking tray and brush them with egg wash. Sprinkle with caraway seeds.
- Sesame seeds or salt can be used instead, but caraway tastes best in this case.
- Bake until golden brown, about 20 minutes, but keep an eye on them.
