Mincemeat Cookies
- 2 c. sifted all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/2 c. unsalted butter or margarine, softened
- 1/3 c. sugar
- 1/3 c. molasses
- 1 c. prepared mincemeat
- Sift flour, baking powder, baking soda and cinnamon onto wax paper.
- Beat sugar, butter or margarine in medium size bowl with electric mixer until light and fluffy. Stir in mincemeat by hand, then add flour mixture and beat until well blended.
- Spread batter in a greased 13 x 9 x 2-inch pan. Bake at 350u0b0 for 30 minutes or until center springs back when lightly pressed with fingertip. Cool for 15 minutes in the pan and cut into squares.
- Leave in pan and wrap tightly in aluminum foil. Can be stored up to 2 weeks.
