Cheesy Tuna Twists
- 8 oz. corkscrew macaroni
- 2 Tbsp. butter
- 1 (10 oz.) pkg. frozen mixed vegetables, thawed
- 1 clove garlic, minced
- 1 can cream of mushroom soup
- 3/4 c. milk
- 1 1/2 c. shredded sharp Cheddar cheese
- generous dash of nutmeg
- 1 (6.5 oz.) can tuna, drained
- chopped pimento for garnish
- Cook macaroni according to package directions; drain. Meanwhile, in 10-inch skillet over medium heat, melt butter and cooked vegetables and garlic for 2 minutes, stirring often.
- Add soup to skillet, stirring until smooth.
- Gradually stir in milk. Add cheese, dash of pepper and nutmeg; heat until cheese melts, stirring occasionally.
- Stir in tuna and cooked macaroni.
- Heat through.
- Garnish with pimento.
- Makes 6 cups.
