Cranberry Bread
- 3 c. wheat blend or whole wheat flour
- 1 Tbsp. baking soda
- 1 Tbsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 tsp. ground cloves
- 8 tsp. sugar substitute (not Equal which breaks down under heat)
- salt substitute (i.e., "No Salt") to taste
- 1 (16 oz.) can cranberry sauce (whole berry)
- 1 (16 oz.) can cranberry sauce (jellied)
- egg substitute equal to 2 eggs
- 1 c. canola oil
- pecan or walnut pieces to taste
- Grease (with canola oil) and flour 2 standard loaf pans.
- Sift dry ingredients together.
- Add cranberry sauce and mix thoroughly. Mix in remaining ingredients and pour into the prepared loaf pans.
- Bake at 375u0b0 for 1 hour.
- Let cool in pans.
