Greens
- 1 smoked ham hock
- 8 cups water
- 2 tablespoons salt
- 2 to 3 bunches turnip or mustard greens, washed, stems removed and discarded
- In a large stockpot over medium high heat add ham hock, water and salt, and bring to a boil.
- Reduce heat to low, cover and simmer for 1 to 1-1/2 hours or until ham hock is almost tender.
- Add greens, bring to a boil, reduce heat and simmer for 30 to 35 minutes or until good and tender.
