Sweet And Sour Chicken
- 4 boneless chicken breasts
- 4 tsp. olive oil
- 1 tsp. salt
- 2 bell peppers
- 1 onion
- 1 can chunk pineapple
- 4 Tbsp. vinegar
- 1/3 c. water
- chow mein vegetables
- 2 Tbsp. cornstarch
- 1/2 c. sugar
- 5 Tbsp. soy sauce
- Heat oil in wok and fry chicken until tender or white.
- Season with salt.
- Add green pepper, onions, and syrup drained from pineapple.
- Bring to a boil and cook 3 minutes.
- Mix cornstarch, sugar, soy sauce, vinegar and water; stir this mixture into chicken.
- Cook until thickened.
- Stir pineapple chunks and chow mein vegetables.
- Heat thoroughly.
- Serve over rice or chow mein noodles.
- Add snow peas or water chestnuts if desired.
