A Taste Of Hawaii(Honey-Ginger Chicken)

  1. Twist crown of leaves from pineapple.
  2. Using sharp knife, halve pineapple lengthwise (refrigerate unused half).
  3. Cut fruit from shell, then into chunks; set aside.
  4. Place chicken between 2 sheets of waxed paper; using wooden mallet or rolling pin, pound chicken to 1/2-inch thick cutlets.
  5. Rub chicken with garlic; season with salt (if desired) and pepper.
