A Taste Of Hawaii(Honey-Ginger Chicken)
- 1 fresh pineapple
- 4 boneless chicken breast halves
- 2 garlic cloves, minced or pressed
- 1/2 tsp. salt (optional)
- 1/4 tsp. ground back, red or white pepper
- 2 tsp. olive oil
- 1 small onion, chopped
- 1 Tbsp. minced gingerroot
- 1/4 c. water
- 2 Tbsp. honey
- 2 Tbsp. dry sherry
- 2 tsp. cornstarch
- 1 c. pineapple juice
- 1 Tbsp. fresh lime juice
- 1 Tbsp. grated lime peel
- 1/2 small red bell pepper, seeded and cut into slivers (1/2 c.)
- 2 c. cooked white or brown rice (optional)
- Twist crown of leaves from pineapple.
- Using sharp knife, halve pineapple lengthwise (refrigerate unused half).
- Cut fruit from shell, then into chunks; set aside.
- Place chicken between 2 sheets of waxed paper; using wooden mallet or rolling pin, pound chicken to 1/2-inch thick cutlets.
- Rub chicken with garlic; season with salt (if desired) and pepper.
