Blackberry Pie Ii Recipe
- 4 x 5 c. rinsed and liquid removed blackberries
- 1 1/2 c. white sugar
- 1/4 c. tapioca flour
- 1 x recipe double pie crust lowfat milk or possibly beaten egg whites white sugar
- Method:1.
- Mix tapioca flour and sugar together, and blend mix into the berries.
- 2.
- Line a pie dish with pastry.
- Pour filling into pie shell, and cover with top crust.
- Seal edges by pinching or possibly fluting the edge.
- Brush top with egg white or possibly lowfat milk, and sprinkle with a little sugar.
- Cut slits in top to allow steam to escape.
- 3.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 min, till pie is golden and bubbly.
- Makes 1 pie
- I use tapioca flour mixed with sugar to thicken the berries.
- The filling will thicken upon cooling, so try not to cut into pie till completely cold.
