Garden Saute
- 12 cup crisco corn oil
- 1 large onion, quartered, then halved
- 2 medium zucchini, cut into 1/2 inch slices
- 2 medum yellow squash, cut into 1/2 nch slices
- 4 ounces mushrooms, halved
- 2 teaspoons dried oregano
- salt and pepper
- 13 cup grated parmesan cheese
- In a large skillet with a lid, heat Crisco oil over medium high heat.
- Add onion.
- Saute 3 minutes.
- Add zucchini, yellow squash, mushrooms, oregano and salt and pepper; saute 5 minutes more.
- Cover and cook until tender, about 10 minutes.
- Sprinkle with Parmesan cheese; serve immediately.
