Peanut Brownies
- 1/3 c. butter or oleo
- 2 (1 oz. each) sq. unsweetened chocolate
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 c. unsifted flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/3 c. chopped Spanish peanuts or other nuts
- Place oleo and chocolate in glass mixing bowl.
- Microwave on High, uncovered, 1 to 1 1/2 minutes or until softened, stirring once.
- Stir until melted.
- Blend in sugar.
- Beat in eggs, one at a time.
- Stir in remaining ingredients.
- Spread in an 8-inch square glass baking dish, greased on bottom only.
- Cover with plastic wrap.
- Microwave on High for 5 1/2 to 6 1/2 minutes or until no longer doughy, rotating dish 3 or 4 times.
- Remove plastic.
- Cool and cut into bars.
- Makes about 24 bars, 75 calories each.
