Pork Chop Delight
- 6 pork chops
- 2 Tbsp. vegetable oil
- 1 c. uncooked rice
- 2 tsp. salt, divided
- 3 c. hot water
- 1/4 tsp. ground red pepper
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 1/4 tsp. black pepper
- 1 (10 1/2 oz.) can cream of mushroom soup
- Trim as much of
- the
- fat
- from chops as you can.
- Heat oil in a large
- skillet and brown chops on both sides.
- Spread rice evenly in the bottom of a 9 x 13 x 2-inch baking pan that has been well-greased.
- Add
- hot water, 1 teaspoon of the salt and the red pepper.
- Place
- the
- chops
- over
- rice;
- top
- with onion, bell pepper,
- remaining
- 1
- teaspoon
- of salt and black pepper.
- Spoon soup over
- the
- top; cover and bake at 375u0b0 for 40 minutes or until rice and chops are tender.
