Berry Champagne Jelly (Jello)
- 3 tablespoons unflavored gelatin
- 2 cups cold water
- 1 cup sugar
- 1 12 cups cold champagne
- 1 12 cups cold ginger ale
- 1 cup berries (whatever you like, slice if large)
- Sprinkle the gelatin evenly over cold water and allow the gelatin to absorb the water for 2 minutes in a saucepan.
- Over high heat, bring the water to a boil.
- Stir until the gelatin is fully dissolved.
- Remove from the heat.
- Transfer to a bowl, add the sugar, and stir until dissolved.
- Stir in the champagne and ginger ale.
- Refrigerate until thickened.
- Fold in the berries and spoon into 8 to 10 individual molds or 1 large (6 and a half to 8 cup) mold.
- Refrigerate until firm.
- Remove from mold, carefully, and serve.
